Makes 20 cookies.

Ingredients:
- 1 cup whole-wheat flour
- 1 teaspoon baking powder
- 1/3 cup oil (I use Smart Balance)
- 1/3 cup packed Splenda Brown Sugar Blend (if using normal brown sugar, double the amount)
- 1 large egg
- 1/2 cup rolled oats
- 1/2 cup craisins
- 1/2 cup chocolate chips (whatever you have in the cupboard, I prefer 60% cacao)
In a medium bowl, mix sugar, egg and oil.
In a large bowl, mix flour and baking powder then add sugar-egg mixture. You may need to use your hands to get an actual “dough” formed. Once you have a dough, mix in oats, craisins and chocolate chips. If you find that your dough is really dry and not coming together, you can add a tablespoon of water or two and stir.
Spoon out onto cookie dish and bake 10-15 minutes until tops are golden and firm.
