Tart Apple Dressing


Servings: 3 or so salads depending on how drenched you like your lettuce.
Ingredients:
  • 1 Granny Smith apple
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 2 tablespoons syrup (whatever you got in the pantry)
  • 1/3 cup extra-virgin olive oil (Although, Smart Balance works too)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper (optional)
Peel apple, and coarsely chop half.  Set aside other half.
In food processor put all the ingredients including chopped apple half.  Blend.  While food processor blends, finely chop the other half of the apple.
Serve dressing on top of your favorite type of salad with chopped apple and your favorite nut.  Suggestions: walnuts, pecans, almonds.

Craisin and Chocolate Chip Oatmeal Cookies


Makes 20 cookies.
Preheat oven to 350.
Ingredients:
  • 1 cup whole-wheat flour
  • 1 teaspoon baking powder
  • 1/3 cup oil (I use Smart Balance)
  • 1/3 cup packed Splenda Brown Sugar Blend (if using normal brown sugar, double the amount)
  • 1 large egg
  • 1/2 cup rolled oats
  • 1/2 cup craisins
  • 1/2 cup chocolate chips (whatever you have in the cupboard, I prefer 60% cacao)
In a medium bowl, mix sugar, egg and oil.
In a large bowl, mix flour and baking powder then add sugar-egg mixture.  You may need to use your hands to get an actual “dough” formed.  Once you have a dough, mix in oats, craisins and chocolate chips.  If you find that your dough is really dry and not coming together, you can add a tablespoon of water  or two and stir.
Spoon out onto cookie dish and bake 10-15 minutes until tops are golden and firm.
